Description
A classic Indian chicken curry recipe.

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 green chili, finely chopped
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 14 oz crushed tomatoes
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and cook until golden brown.
- Add minced garlic, grated ginger, and chopped green chili. Cook for 1 minute.
- Add turmeric powder, red chili powder, cumin powder, and coriander powder. Cook for 1 minute.
- Add chicken pieces and salt. Cook until browned.
- Add crushed tomatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
- Stir in garam masala.
- Garnish with fresh cilantro.
- Serve hot with rice or naan.
Notes
- Adjust the amount of chili powder to your preference.
- For a richer flavor, use bone-in chicken.
- You can add a dollop of yogurt or cream at the end for extra creaminess.
