Description

A classic Indian chicken curry recipe.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 green chili, finely chopped
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 14 oz crushed tomatoes
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until golden brown.
  3. Add minced garlic, grated ginger, and chopped green chili. Cook for 1 minute.
  4. Add turmeric powder, red chili powder, cumin powder, and coriander powder. Cook for 1 minute.
  5. Add chicken pieces and salt. Cook until browned.
  6. Add crushed tomatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  7. Stir in garam masala.
  8. Garnish with fresh cilantro.
  9. Serve hot with rice or naan.

Notes

  • Adjust the amount of chili powder to your preference.
  • For a richer flavor, use bone-in chicken.
  • You can add a dollop of yogurt or cream at the end for extra creaminess.
