- 4 boneless, skinless chicken breasts
- 10 ounces frozen spinach, thawed and squeezed dry
- 4 ounces cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast.
- In a bowl, combine spinach, cream cheese, mozzarella cheese, Parmesan cheese, garlic, salt, and pepper.
- Stuff each chicken breast with the spinach mixture.
- Heat olive oil in a skillet over medium heat.
- Sear chicken breasts for 2-3 minutes per side.
- Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.
Notes
- You can add red pepper flakes for a spicy kick.
- Serve with a side of roasted vegetables or rice.
