Description

Chicken breasts filled with spinach and cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast.
  3. In a bowl, combine spinach, cream cheese, mozzarella cheese, Parmesan cheese, garlic, salt, and pepper.
  4. Stuff each chicken breast with the spinach mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Sear chicken breasts for 2-3 minutes per side.
  7. Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.

Notes

  • You can add red pepper flakes for a spicy kick.
  • Serve with a side of roasted vegetables or rice.
