A one-pan meal with quinoa, black beans, and taco seasoning, topped with cheese.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 packet taco seasoning
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (15-ounce) can corn, drained
- 1 cup salsa
- 2 cups shredded cheddar cheese
Instructions
- Rinse quinoa.
- Combine quinoa and vegetable broth in a skillet. Bring to a boil, then reduce heat and simmer for 15 minutes, or until liquid is absorbed.
- Heat olive oil in a separate pan. Add onion and bell pepper and cook until softened.
- Stir in taco seasoning, black beans, corn, and salsa.
- Pour mixture into the skillet with the quinoa.
- Top with cheddar cheese.
- Cover and cook until cheese is melted.
