Description

A one-pan meal with quinoa, black beans, and taco seasoning, topped with cheese.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 packet taco seasoning
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese

Instructions

  1. Rinse quinoa.
  2. Combine quinoa and vegetable broth in a skillet. Bring to a boil, then reduce heat and simmer for 15 minutes, or until liquid is absorbed.
  3. Heat olive oil in a separate pan. Add onion and bell pepper and cook until softened.
  4. Stir in taco seasoning, black beans, corn, and salsa.
  5. Pour mixture into the skillet with the quinoa.
  6. Top with cheddar cheese.
  7. Cover and cook until cheese is melted.
