Description

Spicy and flavorful Cajun garlic chicken rotini pasta.


Ingredients

Scale
  • 1 pound rotini pasta
  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook rotini pasta according to package directions. Drain and set aside.
  2. Season chicken with Cajun seasoning.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add remaining 2 tablespoons olive oil to the skillet. Add garlic and bell peppers and cook until softened, about 5 minutes.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Stir in heavy cream and Parmesan cheese. Simmer for 2-3 minutes, until sauce has thickened slightly.
  7. Add cooked pasta and chicken to the skillet. Toss to coat.
  8. Garnish with fresh parsley and serve immediately.

Notes

  • Adjust the amount of Cajun seasoning to your preference.
  • For a spicier dish, add a pinch of red pepper flakes.
  • You can substitute other vegetables, such as onions or mushrooms.
