Description
Simple and hearty cabbage soup.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 6 cups vegetable broth
- 1 head of cabbage, shredded
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Add cabbage, diced tomatoes, oregano, salt, and pepper. Reduce heat and simmer for 30 minutes, or until cabbage is tender.
- Serve hot.
Notes
- Add other vegetables, such as bell peppers or zucchini.
- Adjust seasonings to your preference.
