Description

Simple and hearty cabbage soup.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups vegetable broth
  • 1 head of cabbage, shredded
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
  2. Pour in vegetable broth and bring to a boil.
  3. Add cabbage, diced tomatoes, oregano, salt, and pepper. Reduce heat and simmer for 30 minutes, or until cabbage is tender.
  4. Serve hot.
