Classic snowball cookies with a buttery pecan flavor.
Ingredients

- 1 cup butter, softened
- 1/2 cup powdered sugar, plus more for coating
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 cup finely chopped pecans
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream together butter and 1/2 cup powdered sugar until light and fluffy. Beat in vanilla.
- In a separate bowl, whisk together flour and salt. Gradually add to the creamed mixture, mixing until just combined. Stir in pecans.
- Shape dough into 1-inch balls. Place on ungreased baking sheets.
- Bake for 12-15 minutes, or until bottoms are lightly browned.
- Let cool slightly on baking sheets before rolling in powdered sugar. Cool completely on wire racks. Roll in powdered sugar again before serving.
Notes
- For a more intense pecan flavor, toast the pecans before chopping.
- Store cookies in an airtight container at room temperature.
