Grilled chicken thighs with a flavorful marinade.
Ingredients

- 8 boneless, skinless chicken thighs
- 1/4 cup olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a bowl, whisk together olive oil, Dijon mustard, lemon juice, rosemary, thyme, garlic, salt, and pepper.
- Place chicken thighs in a resealable bag and pour marinade over them. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat grill to medium heat.
- Remove chicken thighs from marinade and grill for 6-8 minutes per side, or until cooked through.
- Let rest for 5 minutes before serving.
