Description

Grilled chicken thighs with a flavorful marinade.


Ingredients

  • 8 boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, whisk together olive oil, Dijon mustard, lemon juice, rosemary, thyme, garlic, salt, and pepper.
  2. Place chicken thighs in a resealable bag and pour marinade over them. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Preheat grill to medium heat.
  4. Remove chicken thighs from marinade and grill for 6-8 minutes per side, or until cooked through.
  5. Let rest for 5 minutes before serving.
