Description

Fluffy pancakes with blueberries and a protein boost.


Ingredients

  • 1 cup all-purpose flour
  • 1 scoop protein powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup blueberries

Instructions

  1. In a large bowl, whisk together flour, protein powder, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together milk, egg, and melted butter.
  3. Pour wet ingredients into dry ingredients and stir until just combined.
  4. Gently fold in blueberries.
  5. Heat a lightly oiled griddle or frying pan over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2-3 minutes per side, or until golden brown.
