A protein-packed breakfast bake with blueberries.
Ingredients

- 1 cup rolled oats
- 1/2 cup protein powder
- 1/4 cup chia seeds
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 eggs
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup blueberries
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine oats, protein powder, chia seeds, baking powder, and salt.
- In a separate bowl, whisk together milk, eggs, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Fold in the blueberries.
- Pour the mixture into a greased 8×8 inch baking dish.
- Bake for 30-35 minutes, or until golden brown and set.
- Let cool slightly before serving.
Notes
- You can use any type of milk.
- Feel free to add other berries or nuts.
- Store leftovers in the refrigerator.
