Description

A protein-packed breakfast bake with blueberries.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/4 cup chia seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine oats, protein powder, chia seeds, baking powder, and salt.
  3. In a separate bowl, whisk together milk, eggs, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Fold in the blueberries.
  6. Pour the mixture into a greased 8×8 inch baking dish.
  7. Bake for 30-35 minutes, or until golden brown and set.
  8. Let cool slightly before serving.
