  • 3 large eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup rolled oats
  • 1/2 tsp baking powder
  • 1 cup fresh or frozen blueberries
  • Optional: Powdered sugar or yogurt for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease or line an 8×8-inch baking dish with parchment paper.
  3. In a large bowl, whisk together the eggs, cottage cheese, maple syrup (or honey), vanilla extract, cinnamon, and salt until smooth and well combined.
  4. Stir in the rolled oats and baking powder, then gently fold in the blueberries.
