BLT Pasta Salad

A delightful dish that combines the classic flavors of a BLT sandwich with the fun of pasta, featuring crispy bacon, fresh vegetables, and creamy dressing tossed with rotini pasta.

  • 8 ounces rotini pasta
  • 4 slices of bacon
  • 1 cup cherry tomatoes
  • 1 cup romaine lettuce
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: 1/4 cup green onions

Instructions

  1. Bring a large pot of salted water to a boil and cook the rotini pasta until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
  2. Prepare the vegetables by halving the cherry tomatoes and chopping the romaine lettuce. If using, slice the green onions.
  3. In a small bowl, mix together the mayonnaise, apple cider vinegar, and Dijon mustard. Season with salt and pepper to taste.
  4. In a large mixing bowl, combine the cooled pasta, crumbled bacon, cherry tomatoes, and romaine lettuce. Pour the dressing over and toss gently.
  5. Cover and chill the salad in the refrigerator for at least 30 minutes before serving.
