Ingredients

  • 1.5 lbs beef sirloin, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season beef cubes with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef cubes in batches and set aside.
  3. Add onion and mushrooms to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in flour and cook for 1 minute. Gradually whisk in beef broth and bring to a simmer.
  5. Stir in heavy cream, Worcestershire sauce, and thyme. Return beef to the skillet and simmer until the gravy has thickened and the beef is tender, about 10-15 minutes.
  6. Serve hot over rice, mashed potatoes, or noodles.

Notes

  • For extra flavor, marinate the beef tips for at least 30 minutes before cooking.
  • You can substitute other types of mushrooms, such as shiitake or oyster mushrooms.
  • If the gravy is too thick, add a little more beef broth to reach your desired consistency.
