Ingredients

- 1 lb chicken breast, cubed
- 1/4 cup cornstarch
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 tbsp rice vinegar
- 1 tsp soy sauce
- 1/2 tsp garlic powder
- Cooked rice, for serving
- Shredded carrots, for serving
- Sliced cucumber, for serving
- Chopped green onions, for serving
Instructions
- Toss chicken with cornstarch.
- Heat oil in a skillet over medium-high heat. Add chicken and cook until golden brown and cooked through.
- In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, soy sauce, and garlic powder.
- Pour sauce over chicken and toss to coat.
- Serve chicken over rice with carrots, cucumber, and green onions.
Notes
- Adjust the amount of sriracha to your preferred spice level.
- You can use other vegetables as toppings.
