A straightforward recipe for making classic bagels at home.


Ingredients

  • 1 cup warm water (105-115°F)
  • 1 teaspoon active dry yeast
  • 1 teaspoon granulated sugar
  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 tablespoon malt syrup or honey
  • 1 egg, beaten (for egg wash)
  • Sesame seeds, poppy seeds, or everything bagel seasoning (optional)

Instructions

  1. In a small bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. In a large bowl, whisk together flour and salt.
  3. Pour the yeast mixture into the flour mixture. Mix until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  6. Punch down the dough and divide it into 8 equal pieces.
  7. Shape each piece into a ball, then flatten slightly. Use your thumb to make a hole in the center of each, then stretch the hole to form a bagel shape.
  8. Place the bagels on a baking sheet lined with parchment paper. Cover and let rest for 15 minutes.
  9. Preheat your oven to 425°F (220°C).
  10. Bring a large pot of water to a rolling boil. Add the malt syrup or honey.
  11. Carefully drop 2-3 bagels at a time into the boiling water and boil for 1 minute per side.
  12. Remove the bagels from the water with a slotted spoon and place them back on the parchment-lined baking sheet.
  13. Brush the tops of the bagels with the beaten egg wash.
  14. Sprinkle with desired toppings, if using.
  15. Bake for 18-22 minutes, or until golden brown and cooked through.
  16. Let cool on a wire rack before slicing and serving.

Notes

  • For chewier bagels, you can add a bit more malt syrup to the boiling water.
