Ingredients

  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In a separate bowl, whisk together the egg, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Gently fold in the diced apples.
  5. Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium-high heat to 350°F (175°C).
  6. Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry for 3-4 minutes per side, until golden brown and cooked through.
  7. Remove the fritters with a slotted spoon and drain on paper towels.
  8. Dust with powdered sugar before serving.
