Ingredients

  • 1 cup granulated sugar
  • 2 teaspoons baking powder

  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup apple cider
  • Vegetable oil, for frying
  • 1 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon

Instructions

  1. In a large bowl, whisk together the flour, 1 cup granulated sugar, baking powder, 1 teaspoon cinnamon, nutmeg, and salt.
  2. In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Stir in the apple cider until the batter is smooth.
  5. Heat about 2 inches of vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium heat to 350°F (175°C).
  6. Using a donut cutter or two spoons, carefully drop donuts into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, until golden brown.
  7. Remove donuts with a slotted spoon and drain on paper towels.
  8. In a shallow dish, combine the powdered sugar, 1/4 cup granulated sugar, and 1 teaspoon cinnamon.
  9. While the donuts are still warm, toss them in the sugar mixture until coated.

Notes

  • For a richer flavor, use apple cider that has been reduced by simmering until it is half its original volume.
  • Ensure the oil is at the correct temperature to avoid greasy donuts.
