Instructions
- In a large bowl, whisk together the flour, 1 cup granulated sugar, baking powder, 1 teaspoon cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Stir in the apple cider until the batter is smooth.
- Heat about 2 inches of vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium heat to 350°F (175°C).
- Using a donut cutter or two spoons, carefully drop donuts into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, until golden brown.
- Remove donuts with a slotted spoon and drain on paper towels.
- In a shallow dish, combine the powdered sugar, 1/4 cup granulated sugar, and 1 teaspoon cinnamon.
- While the donuts are still warm, toss them in the sugar mixture until coated.
Notes
- For a richer flavor, use apple cider that has been reduced by simmering until it is half its original volume.
- Ensure the oil is at the correct temperature to avoid greasy donuts.
