Crispy and healthy zucchini fries made in the air fryer.
Ingredients

- 2 medium zucchinis, cut into 1/2-inch thick sticks
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- Set up three shallow dishes. In the first, place the flour. In the second, place the beaten eggs. In the third, combine the panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
- Dredge each zucchini stick first in the flour, shaking off any excess.
- Dip the floured zucchini stick into the beaten eggs, ensuring it’s fully coated.
- Finally, coat the egg-dipped zucchini stick with the panko mixture, pressing gently to adhere.
- Arrange the coated zucchini sticks in a single layer in the air fryer basket. You may need to cook in batches.
- Lightly spray the zucchini fries with cooking spray.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
- For extra crispiness, you can double-coat the zucchini fries.
- Serve with marinara sauce, ranch dressing, or aioli.
