  • ¼ cup sugar
  • ½ cup melted butter
  • 2 packages (8 oz each) of cream cheese, at room temperature
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • ½ cup sour cream
  • 1 cup fresh raspberries
  • ¼ cup raspberry jam, warmed

Instructions

  • Preheat the oven to 175°C (350°F).
  • Prepare the crust: Mix the crushed cookies with sugar and melted butter. Press the mixture into the bottom of a tart pan. Bake for 10 minutes, then let it cool.
  • Prepare the filling: Beat the cream cheese with sugar and vanilla until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream.
  • Pour the mixture over the crust and bake for 30-35 minutes or until the center is slightly firm.
  • Let it cool completely, then refrigerate for at least 4 hours (preferably overnight).
  • Decorate with fresh raspberries and spread the warmed raspberry jam on top before serving.
